The Beans on Flavored Coffee

The Specie

The type of coffee bean used to make a finished flavored coffee influences the impact of how the coffee tastes. Green coffee beans contain different compounds which contribute to their profile, including sugars and other carbohydrates, mineral salts, organic acids and aromatic oils.

The most common coffee beans used for flavored coffees are Arabica, characteristically milder than the robust Robusta beans. Officially, Coffea canephora, a hardier specie with a shallow root system and known for its resistance to the devastating coffee leaf rust and many other diseases prone to attack coffee shrubs.

The Roast

When essential oils are added to coffee beans too mildly roasted, the coffee lacks significant characteristics, and represents flat-tasting coffee results. If the roast is too dark, the flavoring becomes overshadowed by the taste of the beans.

Medium to brown is the perfect roast color for these popular coffees For example, a French Vanilla essence will be undermined by a French roast bean and overwhelm the sweet creamy tones of the desired French vanilla taste.

The Coffee

Coffee beans are influenced by many factors such as its specie, strain, growth area, climatic conditions, latitude and altitude, soil, processing and the roast level.

A single type of coffee bean can be used like Kenya AA, which has distinctive taste characteristics of high winey acidity that can ignite and empower certain chocolaty taste. For other flavors, using a blend of beans from various regions designed to project a unique base is optimal.

Natural oils used in flavored coffees are extracted from a variety of sources such as vanilla beans, cocoa beans, and various nuts and berries. Cinnamon, clove, and chicory are also used in a variety of coffee.

The Flavoring Science

Flavor chemists blend many oils to achieve specific combinations. While other foods may be composed of nine or 10 ingredients, coffee flavors require up to 80 different compounds. The primary goal is to seek ideal flavored coffee that does not interfere with the coffee’s aromatic and taste characteristics.

Pure compounds are highly concentrated and must be diluted in a solvent to allow the blending of multiple oils and easy application to the roasted coffee beans. The current technology uses stable solvents which leave the beans with a glossy sheen and longer lasting oil.

The chemicals and the solvents used in flavors must not only be approved for use in foods, but they must also not adversely react with the packaging material and the processing equipment with which they come into contact.

5 Desserts You Can Make With Coffee

A flavorful dessert is normally a great accompaniment to a meal. However, not many people realize that coffee can be used in the preparation of many dessert dishes. Below are a few fantastic options for anyone who is considering the option of adding coffee desserts to their after dinner menus.

1. Coffee Cupcakes

While baking regular cupcakes, adding 2-3 tablespoons of your favorite type of coffee to the flour will make a tremendous difference to their taste. This can be in the form of mocha, espresso or virtually any other ground coffee that is available. Once baked and they are ready to be iced, a little ground coffee can be added to whatever type of icing is going to be used as well – or simply use regular vanilla icing to ensure that the flavor doesn’t become too overwhelming.

2. Coffee-flavored Ice Pops

Many people only associate ice pops or popsicles with fruit juice or soft drinks. However, these can just as easily be made by using a combination of milk and coffee as well. Instead of making the coffee with water, it should be made with milk, poured into molds and be allowed to set in the freezer for a few hours. Anyone who is allergic to dairy can consider using coconut milk, almond milk or even rice milk as a substitute and still enjoy a cold dessert.

3. Espresso Brownies

Although these delectable coffee desserts may not be suitable for young children, they will definitely be a hit at an all-adults dinner party. When using any regular brownie recipe, a few tablespoons of any type of finely ground espresso can be used to enhance the flavor substantially, while also adding an interesting twist to what is usually a relatively plain dessert.

4. Coffee Panna Cotta

This is an extremely smooth and creamy dessert that can be prepared in shaped molds, with a coffee-based and/or brandy sauce that is flambéed over it. The dessert itself can then be garnished with chocolate chips, chocolate-covered coffee beans or even a basic chocolate sauce. If serving to children or non-alcoholics, the brandy can be omitted from the recipe.

5. Quick Coffee Ice Cream

Beating just 2 cups of heavy cream, adding sweetened condensed milk, chopped nuts and dissolved coffee to the mixture will yield a delicious homemade coffee-flavored ice cream. Once beaten, the mixture will have to be placed in the freezer for a minimum of 4 hours to set fully. Nuts can be omitted if need be and replaced with chopped fruit pieces, chocolate chips, sprinkles or even crushed Oreo cookies.

Preparing coffee desserts need not be a time-consuming chore. In fact, the options mentioned above usually do not take a lot of time to prepare – 20 to 30 minutes at most (excluding setting time in the freezer for some). Different types of coffee can be used in each of them as well, depending on what the preferred choice is. However, they all have one thing in common – they are sure to delight the taste buds of everyone who tucks into them.

Do you love drinking coffee? If you do, you are going to love it more when you learn about what it can do for you and your health. It’s no secret that a nice cup of coffee can instantly perk you up in the morning and put you in the right mood the whole day. But did you know that it can also have great benefits to your health?

Studies show that drinking coffee can lower the risk of certain diseases like diabetes, cirrhosis, and certain kinds of cancers. This is made possible by the compounds present in the coffee, the most known to help among which are antioxidants. Antioxidants also help in making your skin glow, and in consuming the right amount of coffee every day, you’ll look and feel healthier inside and outside.

Of course, apart from how it benefits you physically, the mere aroma of coffee can do wonders for you already. The smell of coffee in the morning is sometimes enough for me to wake me up and energize me, let alone drinking my favorite brewed coffee.

The aroma of the coffee has also been found by studies to calm people, so if you’ve been in a daze lately, smelling your cup of coffee before drinking it can relax you already.

It’s important to note however that there is a recommended amount of coffee to be consumed in a day. One to two cups of your favorite black coffee is enough to get you through the day, but be careful in adding too much sugar or milk to go easy on the calories. And while coffee can do a lot for you, too much of it cal have bad effects to.

Too much coffee in a day can dehydrate you and increase your blood pressure. So even if you love coffee as much as everyone else, it’s always to take everything in moderation.

Those trying to diet and lose weight may actually be hindered in their progress by their coffee consumption. If you want to avoid long term weight gain you should avoid caffeine. You might think in the short term that you can lose more weight by drinking more coffee each day.

This happens as a result of the diuretic effect of coffee, you’ll initially lose water but not fat. Caffeine increases stress hormones within your body that increase the risk of hypoglycemia, or low blood sugar levels. You will likely feel hungry sooner than you should as a result of this hormone.

You also aren’t helping things by adding extra sugar to your coffee. In conclusion, research has shown that drinking some coffee may actually be good for your health. However, the same research also proves that drinking more than three cups of coffee per day may begin to increase the negative health risks that could arise.

Make sure you don’t attempt to drink more than this amount of coffee. Doing this lets you get the benefits of drinking coffee without the potentially harmful side effects of drinking too much coffee.

5 Essentials for Impeccable Home Roasted Coffee

The aroma of a fresh cup of rejuvenating coffee is probably the best kickstarter for the day. Around the world, the consumption of coffee increases manifolds every single year. But do all of us really enjoy coffee the way it is intended? Yes, the topic of interest for Home Baristas like us right now, is home roasted coffee. The aroma of fresh coffee beans can only be preserved if roasted in the perfect manner while taking care of other essentials.

Here are 5 details that if taken care of, will ensure that the cup of coffee you make every day will be nothing less than perfect. These include aspects other than the chief home roasting procedure as well that can enhance your mornings. Have a look:

  • Choose a Cool and Dark Place to Store Your Coffee Beans – The storage of the coffee beans is something that can simply not be underrated. You should store the coffee beans in a cool and dry place to maintain its freshness for that little bit longer. Right after the home roasting process, coffee should be stored appropriately to preserve it until it is consumed.
  • Select a French Press with a Capacity Exactly Matching Your Needs – If you do decide to go for a french press, you need to get one that can cater to the exact quantity requirements that you have. Using the french coffee roast with the french press in a precise manner can help you get the taste that you will pat your own back for.
  • Go and Grab Green Coffee Beans or Bean Extracts – Other than its obvious popularity for usage in several weight-loss techniques, Green coffee bean extracts also have a definitive flavour to them. There are different types available even in the form of extract or syrups. Try them out and you will probably not be able to think about coffee without them.
  • Do Not Underestimate the Value of a Quality Tamper – A good quality tamper helps in the manual roasting process to a great extent. Tampers need to be of high quality, and the ones made of high-quality steel are probably the best ones around. Buy a stainless steel tamper and you will realise how it changes the way tamping is done.
  • Understand the Different Stages of Roast to Control the Flavour – There are various stages of home roasting that yield different flavour. The roasting, therefore, has to be done extremely carefully. Right after yellowing, steam, and the first crack, you can have several different variations of coffee – from the first roasted stage to caramelization, and the second crack to darkening roast.

The above are just 5 of the essentials that, as per me, are mostly overlooked even though they are significant for the entire roasting process. Try and emphasise on these points and you will start noticing the difference yourself in the daily cup of coffee, and thereby your mornings!

The Natural Health Benefits Of Coffee

Comments Off on The Natural Health Benefits Of Coffee

A Quick Preamble:

It’s official and it’s brilliant news… about something I’ve always believed in and about something I’ve never intended giving up…

Coffee, it’s a Super-Food… yay… !

OK, I may be a little prejudiced – because I totally adore coffee, always have and always will… so “Super-Food” may be a little “energetic” for some people as far as descriptions go for something that for so long has been considered almost poisonous… but hey, it’s a valid and apt description because this ‘much-maligned’ consumable – along with many others I’ve already discussed, and others I’ve yet to discuss – is now beginning to gain some serious ground with regard to it’s TRUE health strengthening benefits…

… and the list of benefits is growing as more scientific research is carried out all over the world..!

Cutting To The Chase:

This is not just an American thing – or Turkish, or Italian – extracting the seed or the “bean” from the berry of the “Coffea” shrub, roasting it and then drinking the end result after grinding and steeping it in hot water is an international pastime, a worldwide habit, with cultivation of coffee plantations taking place in more than 70 different countries across the globe.

Just as a point of interest, the earliest credible evidence of coffee drinking was actually found in Yemen – the Yemeni were drinking coffee approximately 600 years ago but there’s also, yet-to-be fully proved, further evidence that coffee was being used way before then in other areas of the world.

Oh and before we go any further, please bear in mind that I’m talking aboutGOOD coffee, freshly ground, organically grown coffee, with all its’ caffeine intact and present, a “Whole Food” – NOT decaffeinated or the off-the-shelf “instant” rubbish that basically has no goodness in it whatsoever because of modern food production methods…

… so, based on recent (and plenty of continuing) scientific studies, here are some of the great natural benefits of coffee consumption:

Decreased Pain Levels…

Drinking 2 or 3 cups of coffee an hour or so BEFORE your work-out reduces muscle pain – Yup, you read it right… BEFORE your workout, it’s been proven that it can help you to push a little harder when strength training, with the result of better/quicker gains in muscle strength and endurance.

Increased Muscle Fuel…

Compared to the consumption of carbs alone, a coffee and carb’ combo can give you up to a 66% increase in muscle Glycogen for as long as 4 hours after an intense work-out… this good news because Glycogen is a carb’ that’s normally stored in muscle for energy during heavy exercise… so the more you have, the better your ability for working-out harder and longer.

Improved Blood Circulation…

The better your blood flow, the better your oxygen flow to blood vessels and your muscles… oxygen is our greatest healer and body & mind preserving element… simple..!

The studies carried out for this have it recorded that those who drank coffee regularly, gained a 30% increase in blood flow over a period of 75 minutes… better blood flow means larger oxygen levels for your body and your muscles as well as your brain of course… for better health and again, better work-outs.

Reduced Muscle Atrophy…

OK, I’ll have to get just a little bit technical to explain this one – just bear with me for a little while…

A critical natural element in your muscles is what’s known as the Neuromotor, which in turn, is supported by something called the “Brain-Derived Neurotrophic Factor” or BDNF – triggered from your brain via coffee… without the Neuromotor, a muscle can be compared to a fire without heat… age-related atrophy of the muscles is partly due to Neuromotor degradation.

It’s been found that coffee helps delay age-related muscle strength, which in turn of course, suggests that coffee is an aid to muscle preservation as you age.

Increased Memory…

Recent research on a bunch of people conducted at Johns Hopkins University found that 200 milligram (mg) of caffeine enhanced the participants’ memory for up to 24 hours… that’s pretty amazing… again, because of BDNF – it activates brain stem cells to convert into new neurons in your brain… a definite plus, don’t ya think..!?!

And a few other things:

– Don’t be careless… as with everything else, too much of a good thing can be dangerous… a maximum of couple of cups before your workout, maybe even 3, depending on your weight/size… and maybe 1 or 2 small cups post-workout.

– Good quality water should still be in the mix – when you’re thirsty and you’ve already had your coffee quota, water’s the way to go.

– Treat coffee like a “whole-food” – it isn’t just caffeine that’s needed, that can be dangerous on it’s own – Red Bull IS NOT the way to go – you need ALL the nutrients and ingredients that come with a good cup of “Joe”… !

– Don’t poison your cup with cream or sugar – especially sugar – I always use cinnamon with mine, but almond milk or some natural vanilla’s always good.

– And of course, even though we’re beginning to wake up to the positives of coffee, this one point remains a negative… DON’T DRINK IT BEFORE YOU HIT THE SACK..!..I say stay off the coffee for at least 4 hours before you intend to sleep, but even longer would be better.

– The darker the roast, the better – studies find that dark roast coffee restores blood levels of the antioxidants vitamin E and Glutathione more effectively than light roast… the same study group proved that dark roast also led to a significant body weight reduction in pre-obese volunteers, where again, the light roast didn’t.

– Other studies have also showed that dark roast coffee produced more of the chemical N-methylpyridinium… this helps prevent production of excess stomach acid.

A Final Anecdote:

In short it’s still a bit of an awkward food to discuss – you’re either for it or you’re not – and there are, without doubt still a few ‘possible’ inherent dangers, if you drink too much of it… so don’t… you’re human, I’m human (mostly), and a little bit of what we like is never a problem… but moderation is key… !

Like most things that you need to maintain or improve your health and wellness, there’s a balance to maintain… but if consumed correctly, coffee CAN be part of the Naturally Healthy lifestyle that your body and your mind needs.

And a final word from Star Trek – Voyager:

Coffee is one of the primary sources on antioxidants for most people. Coffee has been an important social occasion for over two hundred years and contributes to our daily nutrition. Inexpensive coffee can be found many places, but this coffee may have toxins from the area of its origin or the place that was roasted and ground. Do not ever freeze coffee. This dries it out. Keep fresh coffee beans on hand for a really good drink.

Roasting and grinding machines may be cleaned with products containing benzene or other toxic chemicals. Most coffee roasting factories do not use green cleaning products. This may leave a toxic residue on the machines that can get into the coffee. Coffee can also be grown on plantations that have poor quality chemical fertilizers and pesticides.

There are usually several affordable sources of organic coffee in metropolitan cities. Organic coffee helps your body avoid these serious health hazards. Organic coffee can improve short term memory and stimulate nerve impulses in the brain to make the brain more alert. It will affect the energy level of neurons and stimulate the body to clear slight to moderate brain fog. Drink pure water along with the organic coffee to prevent dehydration which slows metabolism.

Coffee protects your body from type 2 diabetes, gall stones, cardiac disease, liver cirrhosis, liver disease, and Parkinson’s. It can increase mental alertness and enhance cognitive performance. It can improve long-term physical endurance. It can benefit the colon and the liver and helps protect these from cancer. It may also prevent stroke in people with high cholesterol levels.

Phenols may protect against certain virus and bacteria. People with high organic coffee intake may experience fewer virus when traveling. Coffee contains chlorogenic acid that reduces blood sugar levels and may help delay the onset or prevent diabetes. If you are drinking coffee, focus on organic coffee for maximum health benefits! A great cup of coffee is made with cool pure filtered water. You can purchase an affordable Brita or Pur pitcher water filter or one that can be attached to your faucet. Grind your beans immediately and grind only the amount you need. Use one tablespoon of coffee for each six-ounce serving of coffee. Purchase a good grinder and stash it under the counter. They are very affordable and are good investments.

Keep several types of coffee on hand. There are French Roast, Colombian, Pacific Island, Brazilian, Italian and many others. There are several types of flavored coffees that may be used for desert coffee. The new single portion coffee dispensers that have the single serving in a plastic container may have plastic contaminants from the very hot water hitting the plastic.

The Amazing Benefits of Coffee

Comments Off on The Amazing Benefits of Coffee

Do you enjoy your morning cup of coffee? I do, and as I write there is a steaming cup of dark coffee next to me.

Not only does coffee continue to be a popular beverage to help start the day, but more and more evidence is showing that there are many health benefits which can come along with it too.

If you are a moderate coffee drinker, you will have lower risk of:

  • Strokes
  • Arrhythmias
  • Gallstones
  • Type 2 diabetes
  • Parkinson’s disease

Even decaffeinated coffee can help in the case of type 2 diabetes.

In a major study, over 193,000 people were examined, and those who drank on average 6-7 cups of coffee were about 35% less likely to be diagnosed with diabetes.

Those who drank 4-6 cups a day had a 28% less risk of type 2 diabetes.

Gender, age, weight – none of that mattered; the risk was still lowered.

In a larger study, Researchers in Australia looked at almost half a million people – and found a 7% drop in risk of diabetes for every extra cup of coffee a day!

In fact, drinking decaf coffee or black tea decreased the risk by almost the same amounts.

What about stroke and heart disease?

What evidence exists to show that coffee can lower these risks?

In men, both the risk of a heart attack and stroke were lowered when they were regular coffee drinkers.

For women, only the risk of stroke was lowered.

One possible reason for this gender difference could be the increased risk of heart attacks women have after menopause, due to their estrogen levels dropping.

As far as Parkinson’s disease, AD and dementia go, the key protective ingredient in coffee appears to be caffeine.

A scientific study looked at almost 1500 people over a period of 20 years.

People who drank 3-5 cups of coffee a day, saw the risk of dementia and AD was 65% less compared to those who did not drink coffee or had fewer than 3 cups a day!

Coffee seems to protect the liver against cirrhosis and even liver cancer. It also appears to protect against gallstones.

Coffee is well-known to help improve concentration and it can improve your ability to exercise.

What is it about coffee besides the caffeine that can help lower the risk of diabetes, heart disease, strokes, Parkinson’s disease, dementia and AD?

Well, at least a part of it has to do with high levels of antioxidants that are found in coffee.

Antioxidants are chemicals found in foods, especially superfoods that eliminate free radicals in the body. Free radicals are produced as a result of normal everyday biochemical reactions in our bodies, but they are very reactive and can damage parts of cells. Your body has natural ways to eliminate free radicals but it can certainly help the body along if you take additional antioxidants either from superfoods, or from supplements.

In fact, coffee is one of the best sources of antioxidants which is easily available.

The science continues to find out how these antioxidants can reduce all of the above illnesses, but we know that they do and there are many studies to prove it. And we know that coffee is a rich course of antioxidants and there are proven health benefits if you drink 3-5 cups a day.

So keep that coffee flowing and stop feeling guilty.
