A little addition of beans and chickpeas to your boring salads can not only amp up the health quotient of your salads, but at the same time will give your salads a twist of taste. Here are a few interesting ways in which you can make your salads more delicious and nutrient-rich.
Zucchini chickpea salad
If you are looking for a salad that gives you the right dose of protein, then this is the thing to go for! To make this salad, take a pressure cooker over medium flame and add 1 cup overnight soaked chickpea along with a dash of salt. Pressure cook this for 1or 2whistles. Then turn off the flame and drain the excess water.
In the meantime, wash and chop, 1 large onion, 2 tomatoes, 1 zucchini and 1 cucumber. Take a large bowl, add in the fresh veggies, boiled chickpeas. Mix it well.
Then make the dressing, take 1whole lemon juice, 1 teaspoon mixed herbs, 1 teaspoon roasted cumin, 1 teaspoon paprika, ½ teaspoon black pepper and salt as per taste. Whisk it well and add it to the salad, mix it together and enjoy.
Quinoa and bean salad
To make this drool worthy salad, take a cup of quinoa and cook it partially with some water, drain excess water and keep it aside.
Next, take a pressure cooker and add 1 cup of kidney beans, chickpea and 2 garlic cloves, 4 black pepper whole and 1 inch ginger along with water. Pressure cook for 3 whistles, drain the water and keep the beans and chickpea in a large bowl.
To the bowl, add in 1 cup of hung curd, 1 teaspoon mixed herbs, 1 teaspoon oregano, 1 chopped red onion, 1 cup quinoa, 1 cup mixed peppers, 4 chopped green chilies, 1 handful coriander, salt, pepper, a dash chili flakes and a handful of sweet corn kernels to add a nice crunch. Mix it together and indulge in the goodness.
Kidney bean and shrimp salad
To make this yummy salad, wash and devein the shrimps. Next, wash and chop 1mixed veggies, 1 red onion, 1 carrot, 1 cup lettuce, 2 green chilies. In the meantime, take a pan with water and add in 1 cup of overnight soaked kidney beans, boil it and drain the excess water.
Next, take a pan over medium flame, add in1 tablespoon of sesame oil and once the oil is hot enough add in 1 teaspoon minced garlic and green chilies along with the onion, saute and add in the shrimps and kidney beans.
Then add in 1 teaspoon paprika, 3 spring onions, 1 teaspoon oregano, salt and pepper. Transfer it to the bowl and add in the veggies, add 2 teaspoon of spicy and sweet chilli dressing, mix it well and enjoy.
Easy chickpeas and corn salad
To begin with, boil 1 cup overnight chickpeas and drain the excess water and keep it aside.
In the meantime, wash and chop veggies and par boil the 1 cup corns. Next take a large bowl, add in the boiled corns and chickpeas, add in veggies and leafy greens as per your choice.
Then add in 2 teaspoon of olive oil, 1 teaspoon garlic powder, 1teaspoon chilli flakes, salt, pepper and mix it together. Then add in 1 teaspoon lime juice and 1 handful fresh cilantro and enjoy!
Tossed chicken salad with chickpeas & beans
To make this enticing salad, boil overnight soaked chickpeas and kidney beans, drain the water and keep it aside. In the meantime, wash, clean and boil 1 chicken breast.
Take a pan over medium flame, add in 2 tablespoon olive oil, then add 2 teaspoon ginger and garlic paste, 1 teaspoon cayenne pepper, salt, pepper as required, toss it nicely.
Cover the lid and cook the chicken, then add in 1 teaspoon garlic powder and oregano along with ½ cup parmesan cheese. Add in the boiled kidney beans and chickpeas. Then transfer the salad to a serving plate.
In the meantime, combine 2 tablespoon honey, 1 teaspoon pepper, 2 tablespoon lime juice, 1 teaspoon chili flakes, mix it nicely and pour over the salad and enjoy!
